In a bowl, mix the marinade ingredients together.
Pour into a dish, add the diced shrimp and chicken. Leave to marinate in a cool place for 30 minutes.
When ready to cook, preheat the barbecue to a medium-high heat. Drain the shrimp and chicken.
Stick the shrimp on two skewers at a time (in parallel).
On the hot, oiled barbecue grill, cook the kebabs on both sides.
Serve with lime wedges and chopped mint on top.
