THAI-STYLE PRAWN BROCHETTE

Ingredients

Serves 4

Preparation time : 15 minutes 
+ 2 hours rest
Cooking time: 10 minutes

  •  16 prawns
       
  • 1 pineapple
       
  • 8 peaches

 Marinade
  • 25 cl olive oil
       
  • 2 lemongrass sticks
  • 4 curry leaves
       
  • 1 finger of ginger
       
  • 1 bunch coriander
       
  • 2 star anise

Instructions

Blend all the ingredients for the marinade in a blender.
Shell the prawns without removing the heads.
Dip the prawns in the marinade. You can marinate them in vacuum bags or on a plate.

Leave to marinate in the fridge for 2 hours.
Preheat the steel griddle to high heat.
Peel the pineapple and cut into 4/4 cm cubes. Cut the peaches into
peaches.
Prepare kebabs by alternating 2 prawns between two pineapple cubes and two peach
peach quarters.
Skewer for 2 minutes on each side while brushing with the
marinade.
Serve immediately.
