What can you cook with a carbon steel frying pan?

Steel is an excellent heat conductor, making it ideal for searing, grilling, and browning. These pans are perfect for cooking meat, fish, potatoes, vegetables, eggs, or crepes while caramelizing juices for an incomparable flavour.

Before first use, seasoning is necessary to develop a natural non-stick layer.

However, they are not suitable for cooking acidic or liquid preparations (like tomatoes, lemon, or white wine), which may damage the seasoning. For these recipes, choose stainless steel or copper pans.

Are carbon steel frying pans induction compatible?

Almost all! In fact, apart from the La Lyonnaise collection, all De Buyer carbon steel pans are induction-compatible.

Their magnetic material slowly absorbs heat and distributes it evenly over the entire cooking surface, ensuring homogeneous and precise cooking on all stovetops.

Are carbon steel frying pans oven safe?

De Buyer carbon steel pans can be used in the oven. However, for pans with a riveted steel handle, it is recommended to limit oven use to short cooking times — maximum 10 minutes at 200°C — to avoid damage.

For longer cooking times, opt for models with special handles or removable handles.

How to care for a carbon steel frying pan?

Right after cooking, deglaze your steel pan with hot water. Then wash it with warm soapy water and dry it immediately. Proper drying is essential to prevent rust spots.

To prevent oxidation, apply a thin layer of oil before storing it in a dry place.
