Lemon Meringue Cake

  • 160 g sugar
  • Zest of 1 lemon
  • 50 g rapeseed or other neutral oil
  • 3 eggs
  • 210 g plain four
  • 8 g baking powder
  • 30 g cornflour
  • 100g whipping cream
  • 90 ml lemon juice

Soaking syrup

  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 tablespoons water
  • 30 g sugar

Italian meringue

  • 50 g egg white (about 1 1/2 eggs)
  • 75 g caster sugar
  • 25 ml water



Preheat the oven to 160° C and line a cake tin with baking paper. In a mixing bowl, stir together the sugar and lemon zest and mix.
Add the oil and the eggs and mix.
Sift the flour, baking powder and cornstarch into the bowl and mix in.
Stir in the cream and the lemon juice.
Spoon the mixture into the prepared cake tin and bake in the oven for 50 minutes.
Once the cake is cooked, turn it onto a cooling rack, remove the baking paper and leave to cool.

Soaking syrup

In a saucepan, bring all the ingredients to the boil. Remove from the heat and, using a pastry brush, apply to the cake.

Italian meringue

Pour the sugar and water into a saucepan and cook until the temperature reaches 118°.
Meanwhile, in a mixing bowl, whisk the egg whites until they form soft peaks. Add the syrup and whisk until cool.
