Revisited Cherry Clafoutis: Almond, Honey, and Orange Blossom version

Ingredients

  •  500 g of fresh cherries (with pits or pitted, depending on preference)
  • 3 eggs
  • 80 g of honey (or brown sugar)
  • 100 g of almond flour
  • 50 g of flour
  • 30 g of melted butter
  • 200 ml of whole milk
    100 ml of heavy cream
    1 tablespoon of orange blossom water
    1 teaspoon of vanilla extract
    A pinch of salt
    Sliced almonds (for decoration)
    Powdered sugar (optional)

Preparing cherries

Wash and stem the cherries.

Option 1: Leave them with the pits for more flavor.
Option 2: Pit them for a softer texture.

Preparing the cladfoutis batter

Preheat the oven to 180°C (350°F).

In a mixing bowl, whisk the eggs with the honey until the mixture becomes frothy.

Add the almond flour, flour, and salt, then mix well.

Incorporate the melted butter, milk, cream, vanilla, and orange blossom water.

Assemble and bake

Butter a dish and arrange the cherries evenly.

Pour the clafoutis batter over the cherries.

Sprinkle with sliced almonds for a slight crunch.

Bake for 35 to 40 minutes, until the top is golden and slightly wobbly in the center.

Enjoy !

Let it cool slightly before dusting with powdered sugar.

Serve warm or cold, plain or with a scoop of vanilla ice cream or a dollop of fresh cream.
