Vanilla flan

Ingrédients

  • 280 g puff pastry
  • 250 g milk
  • 250 g double cream
  • 2 vanilla pods

  • 100 g sugar
  • 2 large eggs
  • 40 g corn or potato starch
  • 50 g butter

Instructions

Roll out the puff pastry and line your pan.

Set aside in freezer.

Boil the milk, cream and the two scraped vanilla pods.

Remove from heat as soon as it boils and allow it to infuse for 10-15 minutes.

Break the eggs into a round bowl. Add the sugar and cornstarch. Whisk until frothy.

Remove the vanilla pods from the liquid. Pour the liquid into the mixture in the bowl.

Transfer to a pan and bring it to a boil while whisking.

Remove from heat immediately, add butter and mix with a hand blender.

Allow to cool.

Preheat your oven to 180°C.

Pour the mixture over the frozen dough.

Bake for about 35 minutes.

After baking, put your flan on a rack until it cools.
