Preheat fan oven to 180°.
To make the caramel: Heat the sugar over low heat until you obtain a golden caramel. Then place it into a charlotte mould.
Pour the milk into a saucepan and add the seeds of the vanilla pod. Bring to a boil.
In a container, beat the eggs and the sugar, then pour the boiling milk on top while stirring with a whisk.
Pour the mixture over the caramel, then place the charlotte mould in a large rimmed baking dish, adding half the hot water for cooking in a bain-marie.
Bake for 40 minutes, positioning the baking rack at the bottom of the oven. The flan is ready when a knife blade comes out clean.
Cool on a wire rack, then refrigerate for 8 hours. Turn out onto a plate just before serving.
