Saint Nicholas Mannele


Serves 6 to 8

Preparation time : 40 min
+ 2 hours 30 minutes  resting time
Cooking time : 20 min

  • 500g flour
  • 8g dry baker's yeast
  • 200ml semi-skimmed milk
  • 80g caster sugar
  • 5g fine salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 150g softened butter
  • 10g chocolate chips
  • 1 egg yolk
  • 1 tbsp milk


Warm the milk, then take off the heat before adding the dried yeast. Leave to rest for 10 minutes.
Place the sugar, salt, beaten eggs, vanilla extract and milk in a food processor. Add the flour and mix for 10 minutes at medium speed.
Then add the butter and mix for another 15 minutes. Cover the bowl with a cloth and leave to proof for 90 minutes in a warm place.
Punch down the dough then roll it out on a floured work surface.
Using a cookie cutter in the shape of a man, make shapes then place them on the cookie sheet. Leave to grow for a further 30 minutes near a source of heat.
Preheat the oven to 170°C (fan assisted).
Brush the manneles with an egg yolk mixed with milk, then add a few nuggets to form the face and the buttons. Bake for 15 minutes and then cool on a wire rack.
