Preheat your oven to 100 °C. Separate the egg whites from the yolks.
Add a pinch of salt to the egg whites and whisk them.
Gradually add the sugar as your whisk.
When the egg whites are stiff, gently incorporate the icing sugar, which should be sifted in advance with a spatula.
If you have one, use a piping bag to shape your meringues. If not, make small meringues with the mixture using two teaspoons on a baking sheet lined with parchment or non-stick paper. Bake for 1 hour at 100 °C.
Remove from the oven and leave to cool on a wire rack.
