Courgette salad with parmesan and lemon

Preparation time : 10 min

  • 2 slender, young courgettes
  • 4 Tablespoons olive oil
  • ½ lemon
  • 10 g (2 tsp) grated parmesan
  • 20 g (1.5 oz) parmesan shavings
  • ½ Tablespoon pine nuts
  • A few basil leaves
  • Salt
  • Pepper


Slice the courgettes into ribbons using the mandolin. If you desire, you may cut some of the courgettes into cubes or diamond-shaped pieces.
Combine the olive oil, grated parmesan, a little lemon zest and the juice of half a lemon.
Pour the dressing over your courgettes.
Add the parmesan shavings, pine nuts and basil.
Season with salt and pepper before serving!
