Slice the courgettes into ribbons using the mandolin. If you desire, you may cut some of the courgettes into cubes or diamond-shaped pieces.
Combine the olive oil, grated parmesan, a little lemon zest and the juice of half a lemon.
Pour the dressing over your courgettes.
Add the parmesan shavings, pine nuts and basil.
Season with salt and pepper before serving!
