With it, you can cook meats and even eggs without them sticking to the pan’s surface. Indeed, the steel frying pan is renowned for promoting the Maillard reaction: caramelizing the surface juices while keeping the interior of the food tender and juicy.

Compatible with all heat sources, including induction, the professional steel frying pan adapts to your kitchen. You can also use it to finish cooking or keep your dish warm, with a maximum oven time of 10 minutes at 200°C.
Designed to respect professional techniques, the de Buyer steel frying pan features a Lyonnaise shape, allowing food to slide easily for impeccable serving. It also has a French-style curved riveted handle, providing a comfortable grip and ergonomic handling.

Made from white steel sheet in our Vosges factory, the de Buyer MINERAL B frying pan is warp-resistant and designed to enhance your meats and vegetables by searing them to perfection. Coated with beeswax, this pan is protected from oxidation until it reaches your kitchen. The beeswax also helps with seasoning, the process that gives your steel frying pan a naturally non-stick surface.
As steel is prone to oxidation, the MINERAL B frying pan should always be dried after washing and stored in a dry place. A light layer of oil can be applied before storage to protect it further.

Pour about 1mm of oil into your iron pan and heat it. Once the oil slightly steams, empty it into a recipient and wipe the pan with a paper towel.
The seasoning of your pan will be optimal and efficient after having cooked red meat 10 times. The more your pan is used, the best the cooking results are. The more it blackens, the less it sticks. Once your pan is well seasoned, you will be able to cook more delicate food such as eggs, fishes…
