Bao, filling of your choice, steamed in a bamboo basket

Ingredients

  • 500 g all-purpose flour (T45)
  • 10 g active dry yeast (or 25 g fresh yeast)
  • 250 ml lukewarm whole milk
  • 50 g granulated sugar
  • 1 tsp fine salt
  • 2 tbsp neutral oil

Preparation time

Dissolve the yeast in the lukewarm whole milk with a pinch of sugar and let it activate for 10 minutes.

In a large mixing bowl, combine the flour, sugar, and salt.

Pour in the milk with the activated yeast and the neutral oil.

Knead for 10 minutes by hand or with a stand mixer until you get a very smooth, soft, and non-sticky dough.

Shape into a ball, cover with a clean cloth, and let rise for 1 hour at room temperature until doubled in size.

Punch down the dough on a lightly floured work surface.

Divide into 12 equal portions of about 60 g each.

Shape each portion into a ball, cover, and let rest for 10 minutes.

Roll out each ball with a rolling pin into an oval about 10 cm long and 5 mm thick.

Lightly brush with neutral oil, fold in half without sealing, and place each bao on a small square of parchment paper.

Prepare the steamer: bring a large amount of water to a boil in a wide pot.

Place the baos, still on their parchment squares, in the de Buyer steamer basket, spacing them apart.

Place the steamer basket over the boiling water without letting it touch the water, cover tightly, and steam for 10–12 minutes over high heat without ever lifting the lid during cooking.

Remove the steamer basket from the heat and let it rest for 2 minutes with the lid closed before opening (this resting time prevents the baos from wrinkling when exposed to cold air).
