Preparation time: 40 minutes

Baking time : 30-35 minutes
Start by adding the salt, flour and sugar to the bowl of your electric mixer. Next add the milk, slightly warmed,
and the crumbled yeast (making sure it doesn’t come into contact with the salt).
Knead for two minutes at slow speed (using your mixer’s dough hook), until a consistent dough ball is formed.
Add the butter and continue kneading for around 10 minutes at a slightly faster speed (the dough should come
free from the sides of the bowl).
Place a cloth over the bowl and leave to rise for 1 hr 15 mins in an unheated oven.
After 1 hr 15 mins the dough will have tripled in volume. Knock the
dough back with your fist to remove the air bubbles.
Roll the dough out with a rolling pin on a floured work surface or a rectangular piece of greaseproof paper.
Spread the soft butter and the sugar-cinnamon mixture over the dough.
Roll the dough into a sausage shape and cut into six pieces. Place the pieces in a
baking tin or tray and leave to rise again for 30 minutes.
Daub the rolls with the yolk of one egg then bake at 180°C for 30 minutes.
Combine all the ingredients together and mix until a smooth icing is formed
