

Here’s the recipe for pistachio and white chocolate cookies by Emmanuelle from Casserole & Chocolat.

Cookie dough
120g of soft salted butter
1 large egg
70g of granulated sugar
15g of vanilla sugar
30g of brown sugar
150g of wheat flour
2g of baking powder or 1/2 teaspoon
2g of baking soda or 1/2 teaspoon
1.5 tablespoons of pistachio

40g of white chocolate chunks
Trim
Place the butter in the bowl of your mixer and whisk until you have a very soft butter.
Add the granulated sugar, vanilla sugar, and brown sugar. Mix until the mixture is almost creamy. Add the egg.
Finally, add the flour, baking powder, and baking soda.

Mix until you obtain a homogeneous mixture.
Form a log, wrap it in plastic wrap, and refrigerate for one hour.
Preheat the oven to 200 degrees.
Shape 6 dough balls of the same size.
Place them in your pastry rings placed on the tray.
Gently flatten the balls and place the white chocolate chunks on top.
Bake for 11 minutes, then lower to 160 degrees and bake for another 4-5 minutes (your cookies should be lightly golden).
Leave on the tray until cooled.
Melt the sugar in a saucepan until you have a light caramel.
Remove immediately from the heat. Off the heat, add the pistachios and mix quickly.
Pour the caramelized pistachios onto a baking mat.
Once cooled, separate them from each other.
Pipe large drops of pistachio praline onto your cookies.
Sprinkle with pistachios.
