Pink marshmallows

Ingredients

  • 180 g granulated sugar
  • 150 ml water
  • 8 sheets of gelatin (about 16 g)
  • 2 egg whites (about 60 g)
  • 1 tablespoon strawberry syrup or strawberry flavoring
  • A few drops of red food coloring (optional)
  • 50 g powdered sugar
  • 50 g cornstarch (cornflour / Maizena)
  • 1 tablespoon neutral oil (for the mold)

Preparing

Soak the gelatin sheets in a bowl of cold water for 10 minutes.

Whip the egg whites until stiff peaks form, either in a bowl or with a mixer.

In a saucepan, bring the water and sugar to a boil without stirring, until it reaches 125°C (257°F).

Remove from the heat, add the squeezed gelatin, and stir until fully dissolved.

Pour the hot syrup in a thin stream over the whipped egg whites while beating at high speed.

Continue whipping until completely cooled.

Add the strawberry syrup and a few drops of red food coloring. Mix briefly.

Mix the powdered sugar and cornstarch. Lightly oil a mold and sprinkle the sugar–cornstarch mixture on the bottom.

Spread the mixture into the mold, smooth the surface, then sprinkle the sugar–cornstarch mixture on top again.

Let it rest at room temperature for at least 3 hours (or overnight).

Unmold, cut into cubes using a lightly oiled knife, then roll each cube in the powdered sugar–cornstarch mixture to prevent sticking.

Chef’s tip: Whip for an extra 2 to 3 minutes for a lighter, airier texture.
Want a natural version? Use concentrated beet juice instead of food coloring.
