Peel the potatoes and cut them into cubes.
Coarsely chop the onions.
Fry them with the oil in the paella pan.
Add the smoked bacon cut into lardons. Cook for 2-3 minutes, the bacon should be browned.
Add the potatoes and ½ teaspoon of salt.
Cook covered over a medium heat for 20 minutes, stirring occasionally with a spatula.
Preheat your oven to 200 °C.
Deglaze the potatoes with the white wine and cook for another 3-4 minutes.
Season with pepper and add ½ teaspoon of nutmeg.Mix and remove from the heat.
Cover the potatoes with the sliced raclette.
Bake for 5 minutes then switch to " grill" setting until the raclette is well browned.
