Vegetable and Hazelnut Tian

Ingredients

  • 2 zucchinis
  • 2 eggplants
  • 4 tomatoes
  • 1 red onion
  • Olive oil
  • Herbes de Provence
  • Garlic
  • Toasted hazelnuts

Preparation

Preheat the oven to 180°C (350°F) and wash the vegetables.

Slice all the vegetables into thin rounds. Cut the eggplant slices in half.

In a baking dish, arrange the vegetables in this order: a slice of eggplant, tomato, zucchini, and red onion. Repeat the process until the dish is full.

Next, drizzle the vegetables with olive oil, grate a clove of garlic (or add garlic powder), and sprinkle with Herbes de Provence, salt, and pepper.

Bake for about 1 hour and 15 minutes. After 30 minutes of cooking, lightly drizzle the vegetables with a bit of water.

Top with toasted hazelnuts before serving.
