Val d'Ajol Andouille Pie, Caramelized Griottines, and Foie Gras

Ingredients

  • Val d'Ajol Andouille stuffing or whole
  • Val d'Ajol Andouilles: 1.5 kg
  • Cooked whole duck foie gras: 0.300 kg
  • Griottines: 0.200 kg
  • Honey: 0.050 kg
  • Eggs: 4 + 1 for egg wash
  • Shortcrust pastry: 0.500 kg
  • Puff pastry: 0.300 kg

Instructions

Roll out a 6mm thick layer of shortcrust pastry to line the bottom and sides of the mold, with an extra 2 cm overlap on the top. Press the pastry into the mold.
Rinse the Griottines with water, heat the honey, and lightly caramelize them.
Add the eggs to the Andouille stuffing.
Fill the bottom of the pie with about 2 cm of Andouille stuffing.
Add the still-warm Griottines.
Cover with approximately 1 cm of Andouille stuffing.
Add a layer of about 1 cm of cooked whole duck foie gras.
Add a layer of about 3 cm of Andouille stuffing.
Fold the edges of the shortcrust pastry over the top.
Brush the edges of the shortcrust pastry with egg wash.
Roll out a 4mm thick layer of puff pastry.
Complete the assembly by adhering the puff pastry to the edges of the shortcrust pastry.
Brush the top with egg wash and decorate as desired.
Bake in a convection oven for 20 minutes at 210 degrees Celsius, then finish cooking at 150 degrees Celsius until the internal temperature reaches 62 degrees Celsius.
