Why use a non-stick frying pan?
Using a non-stick pan offers several benefits that can simplify everyday cooking. Here are some common reasons why people choose non-stick cookware:
Cooking without added fats: Non-stick coatings often allow you to cook without needing to add much fat, making meals potentially healthier.
Easy to clean: Non-stick pans are generally easier to clean, as food is less likely to stick to the surface. This simplifies post-cooking cleanup.
Even heating: Non-stick pans heat evenly, allowing for uniform distribution of heat and helping to prevent hot spots.
Perfect for delicate dishes: Non-stick pans are ideal for cooking delicate foods like eggs, crêpes, or fish, where gentle handling is key.
Versatility: These pans can be used for a variety of dishes, from stir-fries to sauces to cooking meats and vegetables.

How to clean non-stick utensils without damaging their coating?
After each use, soak your non-stick utensil to remove possible residues. Then, clean the pan with some washing up liquid and a soft sponge. Dry the utensil with a kitchen towel or let it dry on your kitchen sink.
Avoid abrasive sponges and washing powders as they may damage the coating.
We strongly advise you against cleaning non-stick pans in a dishwasher.
What are the different non-stick coatings used by de Buyer?
De Buyer offerts two types of non-stick coatings:
- In the CHOC collections, the non-stick coatings is PTFE-based. It is the PTFE compound that gives the pans their non-stick properties
- In the CERANOA collection, the non-stick coating is ceramic. It appears smoother and shinier than PTFE-coated pans.
The 2 coatings differ in composition.
Both coatings are used for the same type of cooking:.gentle, low-heat cooking (fish, vegetables, legumes, grains... perfect for simmering or reheating prepared dishes).
The usage and care recommandations are the same for both types of coating.
Why are de Buyer non-stick pans thicker than classical ones?
De Buyer non-stick pans have been designed for a professional and intensive use. As a result, pan aluminium body is thick to face frequent uses.
This great thickness also guarantees a homogeneous heat spreading for a uniform cooking, and screens the coating from the heating source. Consequently, the non-stick coating is less exposed to high temperatures and non-stick properties are optimal longer.
Can I seal, brown and grill with a non-stick pan?
Non-stick utensils are intended to be used for delicate cooking at medium and low temperatures. They are perfect for reduction cooking and ideal to simmer, warm up, maintain warm, and readjust pre-cooked dishes.
Can I cook at high temperature with a non-stick pan without damaging its coating? Can I heat the pan while it is empty?
Non-stick aluminium pans spread heat homogeneously and are designed to simmer, warm up and readjust pre-cooked dishes. As a consequence, cooking on high heat is useless. What is more, medium and low temperature cooking preserves the non-stick coating that deteriorates when it is exposed to high heat.
Heating up a non-stick pan while it is empty is highly inadvisable as it would damage the coating.
Should I cook with some fat?
Cooking with or without fat depends on your liking. Non-stick properties of de Buyer coated pans are optimal and enable to cook delicate food easily without adding fat.
Are non-stick pans suitable for traditional and microwave ovens?
You can heat a non-stick pan in a traditional oven from 10 to 15 minutes maximum to warm up or to maintain warm. Non-stick pans are not suitable for microwave ovens as they are made of aluminium.
Do handles heat?
Fix or removable bakelite and silicone handles don’t heat up and remain cold. You can indeed use your utensils freely and safely, without getting burnt.
Iron and cast stainless steel handles heat during long cooking or when they are directly exposed to a heating source. As a result, it is necessary to handle the utensil with a protection such as handle gloves, gloves, kitchen towels or oven gloves.
Can I use metallic objects such as forks, spoons, knifes, spatulas… within non-stick pans?
Using metallic or sharp-edge utensils is highly inadvisable since they damage the non-stick coating. We recommend you to use rigid or flexible round-edge spatulas made of synthetic material.
How to know when the non-stick coating of a pan is worn out?
The non-stick coatings used by de Buyer are multi-layered or reinforced, making them highly resistant to frequent use. Under normal conditions of use, non-stick cookware will not experience premature wear.
A non-stick coating is no longer effective when:
- Peeling or flaking: If you notice areas where the coating is peeling or detaching from the surface, it’s probably time to replace the cookware.
- Scratches: Deep scratches in the coating can reduce its effectiveness and pose a risk of particle release into food.
- Loss of shine: A coating that loses its original gloss may be significantly worn. The surface should remain smooth, not rough.
- Color change: A shift in color—especially toward black or brown—may indicate deterioration of the coating.
- Food starts sticking: If food begins to stick to the surface despite proper use of fats or oils, the non-stick properties may be declining.
- Harder to clean: If cleaning becomes difficult even after careful washing, it could mean the coating is no longer effective.
Do de Buyer's non-stick pans contain PFOS and PFOA?
The chemical substances PFOS and PFOA have been banned since 2009 and 2020, respectively. In accordance with current regulations, de Buyer's pans do not contain PFOS or PFOA.
