Its 3‑ply stainless‑steel construction (AISI 304 stainless steel inside, aluminium core, induction stainless steel outside) ensures even and responsive heat distribution. Cooking is steady, controlled and free of hot spots — an essential advantage for sauces and delicate preparations.
Compatible with all heat sources, including induction, it can also be used in a “flash oven” (30 minutes at 200°C), just like all ALCHIMY saucepans, frying pans and sauté pans.

Its watertight stainless‑steel tube handle, French‑style curved and firmly riveted, offers a natural and stable grip. Its shape limits heat transfer and ensures precise handling, even when the saucepan is full.

AISI 304 stainless steel and 18/10 stainless steel refer to the same type of stainless steel, the one suitable for food contact. AISI (American Iron and Steel Institute) is an international standard used to classify stainless steels.
In everyday use, stainless steel is more commonly referred to as 18/10; the “10” represents the percentage of nickel in the alloy. The AISI 304 specification requires between 8% and 10% nickel. For everyday kitchen use, there is no difference in durability or ageing between 8% and 10% nickel.
AISI 304 stainless steel and 18/10 stainless steel therefore indicate the same quality of stainless steel. However, we prefer to use the term AISI 304 stainless steel, as it is the “official” designation for this alloy.
