A 3‑ply stainless-steel sauté pan for fast, controlled cooking

With its Ø28 cm diameter and 5 L capacity, the straight-sided sauté pan ALCHIMY offers a wide, open cooking surface, ideal for working with generous quantities without losing precision. Its open shape encourages rapid moisture evaporation, a key factor for achieving clean caramelisation and evenly browned food.

To deliver this level of performance, the sauté pan is built on a 3‑ply multilayer assembly: an inner layer of AISI 304 stainless steel to preserve flavours, an aluminium core that distributes heat evenly, and an outer stainless-steel layer compatible with induction. This metal “sandwich” ensures responsive, well-distributed heating.

A utensil designed for smooth and efficient use

The straight rim provides useful height to limit splashes while offering enough space to stir, turn or reduce preparations. The watertight, riveted stainless-steel tube handle ensures a stable grip, even when the sauté pan is full.

The engraved interior measurements (L and Qt) make direct dosing easy, and the pouring rim allows sauces and cooking juices to be transferred cleanly. The sauté pan works on all types of hobs, including induction, and withstands “flash oven” use (30 minutes at 200°C), like the entire ALCHIMY range.

For maintenance, washing with hot water and dish soap is sufficient. It is dishwasher-safe, although manual cleaning better preserves the appearance of stainless steel. As with any multilayer utensil, avoiding heating when empty is recommended.

    AISI 304 stainless steel and 18/10 stainless steel refer to the same type of stainless steel, the one suitable for food contact. AISI (American Iron and Steel Institute) is an international standard used to classify stainless steels.

    In everyday use, stainless steel is more commonly referred to as 18/10; the “10” represents the percentage of nickel in the alloy. The AISI 304 specification requires between 8% and 10% nickel. For everyday kitchen use, there is no difference in durability or ageing between 8% and 10% nickel.

    AISI 304 stainless steel and 18/10 stainless steel therefore indicate the same quality of stainless steel. However, we prefer to use the term AISI 304 stainless steel, as it is the “official” designation for this alloy.

    Pour about 1mm of oil into your iron pan and heat it. Once the oil slightly steams, empty it into a recipient and wipe the pan with a paper towel.

    The seasoning of your pan will be optimal and efficient after having cooked red meat 10 times. The more your pan is used, the best the cooking results are. The more it blackens, the less it sticks. Once your pan is well seasoned, you will be able to cook more delicate food such as eggs, fishes…
