The de Buyer grill pan features a ridged bottom that allows you to sear meat perfectly. These ridges also reduce the surface area in contact with the food, ensuring consistently excellent cooking results.
The more you use this carbon steel pan, the better it becomes, and the less your food will stick. This natural process, called seasoning, gradually changes the pan’s appearance over time, eventually turning it black.

This steel grill pan will easily reach high temperatures thanks to its high heat conductivity. Cooking on steel also ensures an inimitable taste for your meats. Like all products in the MINERAL B collection, the round pan is coated with beeswax to protect it from oxidation and facilitate its seasoning. To improve the glide of food in your de Buyer steel pan, we recommend seasoning it before its first use.

Suitable for all kitchens, the 26 cm de Buyer pan is compatible with all heat sources, including induction. However, we recommend a gradual temperature increase, not exceeding 3/4 of the cooktop's power for your induction cooking.

Pour about 1mm of oil into your iron pan and heat it. Once the oil slightly steams, empty it into a recipient and wipe the pan with a paper towel.
The seasoning of your pan will be optimal and efficient after having cooked red meat 10 times. The more your pan is used, the best the cooking results are. The more it blackens, the less it sticks. Once your pan is well seasoned, you will be able to cook more delicate food such as eggs, fishes…
