

Preparation
Preheat the oven to 180 °C (356 °F).
Prepare 2 perforated baking tray lined with a silicone mat. Set up the TUBE with a large round tip. Use rolling tubes and cones to shape the Russian cigarettes and cones.
In a stand mixer with a paddle attachment, work the butter until creamy. Add the sugar and salt. Then add the egg whites followed by the sifted flour.
The dough should have a creamy but not liquid consistency.
Fill the TUBE halfway with the dough.
To make langue de chat, pipe sticks of 5 to 6 cm long, spaced a few centimeters apart, onto a tray using the TUBE.
Bake for 4 minutes, then transfer to a tray.
To make cones or Russian cigarettes, pipe rounds of dough about 8 cm in diameter onto the tray using the TUBE. They will spread slightly during baking. Bake for 4 minutes.
Once out of the oven, carefully detach each circle of dough and shape them immediately using the cones for the cornets and the tubes for the Russian cigarettes. Be sure to shape them while still warm.
