Saffron and chorizo savory madeleines

Ingredients

  • 3 eggs
  • 120 g of flour
  • 11 g of baking powder
  • 60 g of butter

  • 60 g of grated Parmesan
  • 60 g of chorizo
  • 1 teaspoon of saffron

Preparation

  1. Preheat the oven to 210 °C (410 °F).

  2. Melt the butter and add the saffron, allowing it to cool to room temperature.

  3. Cut the chorizo into small cubes.

  4. In a hemispherical bowl, combine the eggs, flour, baking powder, and Parmesan.

  5. Add the melted butter and chorizo to the mixture.

  6. Fit the TUBE with a medium round tip and fill it with the batter. Pipe the madeleines into the cavities of the mold.

  7. Fill the mini-madeleine mold two-thirds full.

  8. Bake for 2 minutes, then reduce the temperature to 180 °C (356 °F) and bake for an additional 2 minutes.

  9. Let cool on a baking tray and repeat the process until all the batter is used.

  10. Enjoy!
