Preparation
Preheat the oven to 210 °C (410 °F).
Melt the butter and add the saffron, allowing it to cool to room temperature.
Cut the chorizo into small cubes.
In a hemispherical bowl, combine the eggs, flour, baking powder, and Parmesan.
Add the melted butter and chorizo to the mixture.
Fit the TUBE with a medium round tip and fill it with the batter. Pipe the madeleines into the cavities of the mold.
Fill the mini-madeleine mold two-thirds full.
Bake for 2 minutes, then reduce the temperature to 180 °C (356 °F) and bake for an additional 2 minutes.
Let cool on a baking tray and repeat the process until all the batter is used.
