Wash and dry the spinach leaves.
Place all the ingredients in a blender and blend until a smooth batter is obtained. Pour the paste into a bowl and let it stand for 1 hour.
Add oil to the MINÉRAL B ELEMENT Blinis pan and when hot, pour in a ladleful of batter. Turn the pancake over when bubbles appear, and cook for a few seconds on the other side.
Serve the pancakes with a teaspoon of crème fraîche and sprinkle with lemon zest.
