Shortbread cookies with thyme and parmesan

  • 150 g flour
  • 150 g grated parmesan
  • 150 g softened butter
  • 1 egg
  • 2 g dried thyme
  • 2 pinches of fleur de sel


Combine the soft butter and the parmesan in the bowl of a food processor.
Add the flour and salt and mix again until you get a sandy consistency. Add the egg and stir to obtain a creamy consistency.  Finally add the thyme.
Place the dough in Le Tube fitted with a cookie nozzle and adjust the position to 2 cl (20 ml).
Preheat the oven to 190°C.
Place the silicone mat on a perforated baking sheet and begin piping the mixture using some pressure. Slightly space out the biscuits.
Bake for 10-12 minutes and cool on a wire rack.
