Pastry bag and nozzle, what is it?

The pastry bag, and its attachable nozzle, allows you to Fill, Garnish and Decorate. It's ideal for thick preparations such as creams, whipped cream, mousses and choux pastries, etc. It's also used in cooking for dressing plates.

The nozzle complements the pastry bag. Today, there are a multitude of nozzles, which when used with certain techniques, multiply the effects and creations. In general, there are two great classics used in kitchens: the plain nozzle, ideal for filling hollow pieces or tart bases, and the fluted nozzle for decorating pastries with cream.

Tritan nozzles

Translucent black in colour, these nozzles are made from BPA-free Tritan plastic and are perfectly shaped, sturdy, reinforced and fabricated in one piece for high-precision work. Their interior cones are 100% smooth, ensuring a high level of cleanliness. Their lengths are adapted to enable them to be easily positioned in the piping bag. These stainless steel nozzles are perfectly shaped, sturdy and fabricated in one piece for high-precision work. They can be used with all types of disposable and reusable bags. They're all coded with their size or model number which can be found in recipe books.

Pastry bags

REUSABLE BAGS

The cotton bag is reinforced and extremely sturdy. It's ideal for choux pastry, hot preparations and can be used for any other type of filling. It's sold individually or as a set.

The polyurethane bag is both strong and flexible. Its smooth interior allows preparations to flow, and the exterior is slightly textured for a better grip. It's sold individually or as a set.

The nylon bag is extra flexible, sturdy, extremely comfortable to use and easy to handle and wash. It's sold individually.

How to install a nozzle onto a bag ?

Step 1

Cut the end off the bag.

Step 2

Slide the tip all the way to the bottom of the bag.

Step 3

Insert the end of the bag in the decorating tip before filling it to prevent the contents from running out of the hole.

Step 4

Fold the top 2/3 of the bag down Hold the bag under the fold. Your hand is protected by the folded bag. Fill the bag using a bowl scraper or a spatula (no more than 2/3 full). The contents of the bag should not go above the fold.

Step 5

Unfold the bag and straighten it to the top. Close it by pinching it between your thumb and index finger and twist the bag with the other hand until it is tight.

HOW TO USE THEM?

Focus on éclairs.

Use

Preferably use the 10 mm - 14 teeth PF10 Petits Fours nozzle to ensure uniform baking. Tilt the bag to 45°. Arrange 12 éclairs (12cm) on a 40 x 30 cm baking sheet.

Nozzles to use

Focus on religieuses.

Use

Fill in an upright position. It's better to use the 10mm - 14 teeth PF10 Petits Fours nozzle for the head and the 14mm - 16 teeth PF14 Petits Fours nozzle for the body. Arrange 8 religieuses on a 40 x 30cm plate. Fill the pastries with cream using a filling nozzle. Use the Sultane nozzle for the decorating cream.

Focus on choux pastries.

Use

We suggest using the 10 mm - 14 teeth PF10 Petits Fours nozzle or a plain nozzle. Use the bag in an upright position to ensure a nice round shape. Arrange 22 rounds of 30mm dough on a 40 x 30cm baking sheet.

Nozzles to use

Did you know?

Adapters enable to change nozzles on the same pastry bag, without emptying it. The same preparation can be used with different nozzles without having to fill a second bag. The base of the adapter is inserted into the pastry bag and the chosen nozzle is attached to the pastry bag from the outside of the bag.
