With its 8.8 L capacity, the Stainless steel stewpan ALCHIMY Ø28cm is designed for generous preparations: large family pot‑au‑feu, slow‑cooked dishes for several guests, or substantial quantities of vegetables. Its wide diameter makes searing effortless, while its height allows reductions, infusions and long simmering without risk of overflowing.
Compatible with all heat sources (induction, gas, ceramic glass, electric), it adapts to every kitchen and is also oven‑safe, ideal for finishing a dish or keeping food warm.

The Stainless steel stewpan ALCHIMY Ø28cm is crafted entirely from 3‑ply multilayer stainless steel: a construction without an added base, where every millimetre of the body contributes to the cooking process. The aluminium core ensures even heat diffusion, while the inner and outer stainless steel layers provide food safety and full stovetop compatibility.
This composition guarantees rapid heat‑up, consistent heat distribution even with large volumes, and excellent reactivity when adjusting the heat. Perfect for switching seamlessly between searing, reducing, simmering and keeping warm with constant precision.
The internal graduations every 0.5 L and Qt make liquid measurement easy — a valuable asset for large‑batch recipes.

Like all pieces in the ALCHIMY collection, the Ø28 cm stewpan is made in France in our Val‑d’Ajol manufacture. Each multilayer stainless steel piece is shaped, assembled and inspected in our workshops, the result of a savoir‑faire passed down since 1830.
Its brushed finish, high‑performance 3‑ply stainless steel and riveted handles embody the ALCHIMY signature: precision, durability and elegance. A professional‑grade stewpan designed for cooks who work with large quantities without compromising control.

AISI 304 stainless steel and 18/10 stainless steel refer to the same type of stainless steel, the one suitable for food contact. AISI (American Iron and Steel Institute) is an international standard used to classify stainless steels.
In everyday use, stainless steel is more commonly referred to as 18/10; the “10” represents the percentage of nickel in the alloy. The AISI 304 specification requires between 8% and 10% nickel. For everyday kitchen use, there is no difference in durability or ageing between 8% and 10% nickel.
AISI 304 stainless steel and 18/10 stainless steel therefore indicate the same quality of stainless steel. However, we prefer to use the term AISI 304 stainless steel, as it is the “official” designation for this alloy.
