Discover Our Range of Carbon Steel Frying Pans

Discover the excellence of De Buyer carbon steel frying pans, designed for demanding home cooks and professional chefs alike.

Made in France, these frying pans are available in several iconic collections: MINERAL B, MINERAL B BOIS, MINERAL B PRO, OUTDOOR, LA LYONNAISE, CARBONE PLUS, MINERAL B TWISTY and MINERAL B LOQY.

Each collection stands out with its unique features, such as white or blue steel sheet construction, meticulous finishes and fixed or removable handle options. These robust and durable frying pans are ideal for searing, grilling and browning food with unmatched precision.

Which Carbon Steel Frying Pan Should You Choose?

Compare the usable diameter, weight, handling comfort and oven-use conditions. MINERAL B features a fixed handle; MINERAL B PRO comes with an oven-safe stainless steel cast handle. For compact storage, MINERAL B LOQY offers a removable handle. Check the compatibility of each product with your cooktop, as well as the base diameter in relation to the burner size.

Is There a Carbon Steel Frying Pan with a Removable Handle?

The MINERAL B LOQY collection combines a carbon steel frying pan with removable handles and side handles compatible with the LOQY system. Remove these elements before oven cooking. The removable handle makes storage easier but does not change the maintenance requirements of carbon steel: the pan body still needs seasoning, drying and oiling. Discover the LOQY removable collection to choose your accessories.

The MINERAL TWISTY collection combines a carbon steel frying pan with a removable handle and side handles from the TWISTY collection. By removing these elements, you can use your cookware in the oven. Discover the TWISTY removable collection to select your products.

What Can You Cook with a Carbon Steel Frying Pan?

Carbon steel is an excellent heat conductor, making it the ideal material for searing, grilling and browning food. Carbon steel frying pans are perfect for cooking meat, fish, potatoes, vegetables, eggs or pancakes while caramelising cooking juices for incomparable flavour. Before first use, seasoning is required to develop a naturally non-stick surface.

However, they are not suitable for acidic or liquid preparations (tomatoes, lemon, white wine), which may damage the seasoning layer. For these recipes, choose a stainless steel frying pan or a copper frying pan.

Carbon Steel or Stainless Steel Frying Pan: Which Should You Choose?

Choose carbon steel for searing, grilling and browning, while accepting the need for seasoning and protection against oxidation. For acidic or liquid preparations, stainless steel is a better choice, as it does not require seasoning. These materials are complementary and suited to different cooking needs. Discover our stainless steel frying pans to complete your cookware collection.

Are Carbon Steel Frying Pans Compatible with Induction?

Almost! With the exception of the La Lyonnaise collection, all De Buyer carbon steel frying pans are compatible with induction cooktops.

Their magnetic material absorbs heat gradually and distributes it evenly across the entire cooking surface, ensuring even and precise cooking on all types of stovetops.

Can Carbon Steel Frying Pans Be Used in the Oven?

De Buyer carbon steel frying pans can be used in the oven. However, for models equipped with a steel strip handle, oven use should be limited to a flash exposure of no more than 10 minutes at 200°C (392°F) to avoid damaging the handle.

For longer cooking times, choose models with special side handles or suitable removable handles.

How Do You Care for a Carbon Steel Frying Pan?

Immediately after cooking, deglaze your carbon steel frying pan by adding hot water. Then clean it with hot soapy water and dry it straight away. Proper drying is essential to prevent any traces of rust from forming.

To prevent oxidation, apply a thin layer of oil before storing the pan in a dry place.
