Rich in our expertise, this carbon steel frying pan features a Lyonnaise shape, perfect for easily sliding food onto a plate. The MINERAL B carbon steel frying pan is warp-resistant and designed for high-temperature cooking. It is ideal for searing, browning, or grilling meats and vegetables.

Seasoning: to enhance the non-stick performance of your food

Made of white steel sheet, this de Buyer 20 cm frying pan is coated with beeswax to protect it from oxidation and to make the initial seasoning easier. What is seasoning? It’s the process that will, over time, make your pan naturally non-stick. It will develop a brown patina that will gradually darken. Far from being dirty, your MINERAL B steel frying pan will offer an increasingly smooth cooking surface.

The carbon steel frying pan makes its way into your kitchen

Your new kitchen ally adapts to your needs, as it is compatible with all heat sources, including induction. You can also finish cooking in the oven for up to 10 minutes at a maximum of 200°C — this is what we call the “flash oven” method.

Like all our steel utensils, the de Buyer MINERAL B frying pan must be thoroughly dried after cleaning and stored in a dry place. If you wish, you can lightly oil your pan before storing it to protect it from oxidation.

    Pour about 1mm of oil into your iron pan and heat it. Once the oil slightly steams, empty it into a recipient and wipe the pan with a paper towel.

    The seasoning of your pan will be optimal and efficient after having cooked red meat 10 times. The more your pan is used, the best the cooking results are. The more it blackens, the less it sticks. Once your pan is well seasoned, you will be able to cook more delicate food such as eggs, fishes…
